Main Dishes12 Jun 2009 09:55 am

3 slices of bacon

2 boneless chicken breasts halved lengthwise and sliced to desired thickness

2 Tblsp butter

1 small onion diced

1/2 red bell pepper diced

2 garlic cloves, minced

1 jalapeno pepper chopped and seeded

3 Tbsp flour

1 c chicken broth

1/2 c milk

1 c shredded pepper jack cheese

1/4 c sour cream

1 pinch cayenne

16 ounces penne pasta

3 green onions thinly sliced

Over medium heat, cook backon until semi-crisp, reserving drippings. Drain bacon on paper towels and crumble when cool.

Saute sliced chicken in bacon drippings just until no longer pink. Remove from pan and set aside. In same skillet add the butter and cook onion, peppers and garlic until just tender. Stir in the flour and cook for 1 minute.

Add 3/4 c of the chicken broth and milk. Cook and stir until bubbly. Stir in pepper jack cheese and sour cream, then add the chicken and bacon to sauce.

Reheat, stirring to melt cheese but do not allow sauce to boil to avoid seperation. If the sauce is too thick add the remaining 1/4 cup of chicken broth and/or a little more milk. Serve over cooked penne pasta and sprinkle with chopped green onions before serving.

Pie crust12 Jun 2009 09:35 am

2 1/2 c flour

1/4 tsp salt

3 Tbsp sugar

1/4 c shortening, cold

12 Tbsp butter (1 1/2 sticks) cold and cubed

1/4 – 1/2 c ice water

In large mixing bowl, sift together flour, salt and sugar. Add shortening and break it up with hands as you coat it with the flour. Add the cold butter cubes and work it into the flour with a pastry cutter. Work it quickly so the butter doesn’t get too soft, until the mixture is crumbly, like very course cornmeal. Add the water a little at a time till mixture comes together into a ball. When it comes together stop working it or it will get tough. Divide dough in half and flatten slightly to form disk shape. Wrap each disk in plastic and chill in fridge for at least 2 hours. On a floured surface roll each disk out in to a 10-11 inch circle to make a 9 inch pie.

pie crust recipe

Preheat oven to 400

Make pie crust and fit in 9 inch pie pan with at least an inch hanging over edge.

Mix vegetables, chicken and soup and pour into pie.

Use rest of pie crust to cover pies or to criss cross. Then pull the rest of the crust up to make the crust. If you cover make sure to use a knife or fork to make holes in the top so it doesn’t explode 😀

Bake for 30 minutes or until golden brown.
